Flapjacks

A small glass of coffee on a plate with a home made flapjack, the flapjack is covered in melted chocolate.

These take a few minutes work and about a hour of time to make, but are really simple and utterly delicious. A bit too good truth be told, I find it difficult to stop at just one!

  • 250g butter
  • 150g sugar
  • A good tablespoon of golden syrup
  • 350g rolled oats
  • Chocolate to top if desired.

Gently melt the butter sugar and golden syrup in a pan until the sugar has dissolved.

Stir in the oats.

Press into a 4cm deep, 20cm square, pan lined with baking parchment.

Bake at 150°C (284°F, lower for fan ovens) for 40-45 minutes.

Allow to cool.

After they have cooled a bit, cut into bars.

When cooled completely, melt some chocolate in a bowl over a pan of simmering water, then drizzle the chocolate over the top.

They keep for a few days, longer in the fridge – it’s the butter that can go a bit off if you leave them out where it is warm.
